福岡|車站周邊美食推薦!水炊料亭 博多華味鳥

很久以前曾經聽朋友推薦落腳台北信義區、來自福岡的水炊雞博多華味鳥,然而不久後便撤出,無緣到訪

這次降落福岡的第一頓晚餐,由於抓不準抵達市區的時間,就沒有先訂餐廳;到飯店安頓後,走到車站旁KITTE百貨的分店時約莫七點出頭,四人滿順利就入座

低消是一人一份套餐(不確定同桌的人是否都要點相同的),每種套餐都有招牌的水炊雞,主要差在前菜、甜點等其他料理,因此我們都選了道數最少的套餐,打算餓了再加點

整套吃下來的確最喜歡鮮美而清澈的雞湯、各部位雞肉和雞肉丸,吃專用飼料的華味雞肉質柔軟帶甜,沾橙醋更好吃!湯頭單喝或煮蔬菜、雜炊都不錯,偏清淡但不失風味,冬天正適合

分店多、不一定要訂位,是讓人安心的存在,推薦給享受食材原味或外食想吃得健康的朋友

For our very first dinner in Fukuoka, we didn’t make a reservation since our arrival time was uncertain. After settling into the hotel, we walked over to Hakata Hanamidori KITTE Hakata Branch next to the station and arrived a little after 7 p.m. Luckily, a group of four was seated without much trouble.

There’s a minimum order of one set menu per person (I’m not sure whether everyone at the table has to choose the same set). Every set includes their signature mizutaki chicken hot pot; the main differences lie in the appetizers, desserts, and other dishes. We all went for the simplest set, planning to order extra later if we were still hungry.

My favorite parts were the clear yet flavorful chicken broth, the assorted cuts of chicken, and the chicken meatballs. The Hanamidori chicken, raised on a specially formulated feed, has a tender texture with a subtle sweetness, and it’s even better dipped in citrus ponzu. The broth is lovely on its own and works equally well for cooking vegetables or finishing with zosui.

With multiple branches and no strict need for reservations, it’s a reliably reassuring dining choice. I’d recommend it to anyone who enjoys the natural flavors of quality ingredients or wants a healthier option when dining out.

Amberjack sashimi served with a sesame sauce as an à la carte dish. Unless you’re particularly curious or fond of this style, I wouldn’t say it’s a must-order.

We initially wanted to order the house-made mentaiko separately, but the staff explained that the appetizer in the set would be their house-made mentaiko.
The flavor was clean and straightforward, with a well-balanced saltiness. However, compared with eating it on its own as an appetizer, I personally prefer mentaiko paired with other food.

雞肉刺身不會腥

The chicken prosciutto was free of any gaminess. The grilled parent chicken seemed lightly marinated, with a chewness.

The staff first ladled chicken broth into our bowls and added scallions (optional), so we could taste the broth in its pure form.
Next came chicken served with ponzu. The meat was sweet and tender while retaining a nice texture. I really liked this seasoning—very simple, and it’s something you wouldn’t tire of.

肉質本身就不錯 小火慢煮不太容易老
最驚豔的是雞肉丸
加了山藥和雞蛋 口感特別滑順
The platter included thigh meat, chicken liver, chicken heart, and chicken meatballs. The quality of the chicken itself was excellent, and simmering it gently over low heat kept it from turning tough. The biggest standout to me was the chicken meatballs, made with grated yam and egg, giving them an especially smooth and tender texture.

雞肉吃得差不多以後
可以選擇煮雜炊或麵
After most of the chicken is eaten, you can choose to finish with zosui or noodles.
雜炊吸飽雞湯和蛋液
配著醃漬菜吃 簡單美味
The zosui absorbs all the richness of the chicken broth and beaten egg, and enjoyed with pickles on the side, it’s simple yet satisfying.
