台北｜炸豬排定食推薦！靜岡勝政日式豬排

兩年前在東京第一次認真吃了日式炸豬排，覺得太好吃了，從此成為瘋狂粉絲！回台灣以後試了幾家店，最接近心目中日本口味的竟然是連鎖店靜岡勝政日式豬排

我喜歡明顯的油脂口感與帶甜的豬肉香氣，只沾少許鹽提鮮、不淋任何醬汁，所以就吃過的經驗來說偏好以下組合：

豬種

桃園黑豚（最香甜）👉🏻香草豚👉🏻一般

部位

Toro（肉的層次多、脂肪層厚度剛好）👉🏻里肌（帶口感明顯的脂肪層）👉🏻腰內（油脂分布均勻）

飯

白飯（單純的白米飯搭配重口味的炸物最合適）👉🏻山藥泥麥飯

不嗜大量脂肪的朋友，可以選擇腰內肉，或者點一份帶肥肉、一份全瘦肉與同桌者分食；去過統一時代台北店、南港環球店各一次，經驗是統一時代店的瀝油較充分，整體咬感比較酥脆

Two years ago in Tokyo, I had my first proper experience with Japanese tonkatsu—and it was so good that I instantly became obsessed. After returning to Taiwan, I tried several places, and the one that comes closest to the Japanese flavor I fell in love with is the chain restaurant Katsumasa.

What I love most is the richness of the fat and the sweet aroma of the pork. I season it with just a pinch of salt to bring out the flavor, with no sauce at all. Based on what I’ve tried so far, here’s my preferred combination:

Pork breed

Taoyuan black pork (the sweetest and most fragrant) > Herb-fed pork > Regular pork

Cut

Toro (beautiful layers of meat with just the right thickness of fat) > Loin (a clearly defined fat layer that adds great texture) > Tenderloin (evenly distributed fat)

Rice

White rice (simple steamed rice pairs best with rich fried food) > Barley rice with grated yam

For those who don’t enjoy too much fat, the tenderloin is a good choice. Another option is to order one fatty cut and one lean cut and share them with your friend. I’ve visited branches at Uni-Ustyle Taipei and Nangang Global Mall; in my experience, the Uni-Ustyle branch drains the oil more thoroughly, resulting in a crispier texture.

Tthis is pure comfort food to me. Highly recommended for anyone in Taiwan who wants to experience the charm of Japanese tonkatsu!
